"You put the Lime in the Coconut and you eat it all up!" This yummy entree is a great combination of delightful shrimp with a taste of the Tropics! Shrimp in a coconut sauce with lime, served over colorful pepper infused rice and topped with a bright and tangy mango salsa.

Ingredients: Serves 4 1/2 cup lime juice zest of 1 lime 3/4 cup honey 1 can coconut milk 2 tsp. fresh ginger, grated 1 tsp. minced fresh garlic 1 Tbl. olive oil 1/4 cup cilantro 2 mangoes, peeled and diced 1/4 C finely chopped red onion 2 T chopped cilantro 3 T lime juice 3 T fresh orange juice salt and freshly ground pepper to taste Cooked Basmati Rice

    Heating Instructions
