Fresh, healthy bean and veggie, herb salad featuring fresh, cherry tomatoes and cucumbers! This salad is easy to put together, and super flexible. Any type of bean will do, and you can combine them with a wide variety of fresh herbs and veggies, a great way to use up those last few veggies in the fridge! This is a definite must-add to your healthy recipes for 2020!  

Here's what's included:

 grape tomatoes (1 cup)
Italian parsley (1/4 cup)
lemon (1 ct.)
white beans (1 can)
bell pepper (1 ct.)
green onions (1/4 cup)
cucumber (1 ct.)

ground cumin (2 tsp.)
olive oil (1 Tbsp.)
